Cacao Crunch Granola Cheesecake with Caramel Sauce

Granola becomes a healthy sweet … with a hit of caramel sauce and toasted hazelnuts for good measure!

Ingredients:
  • Cake BASE:
  • 1 Cup Raw Nuts
  • 2 Tbsp. Nut Butter
  • 2 Tbsp. Melted Coconut Oil
  • 1-2 Tbsp. Cacao Powder
  • 1-2 Tbsp. Rice Malt Syrup (optional)
  • Cheesecake FILLING
  • 1 1/2 Cups Raw Soaked Cashews
  • 1/3 Cup Coconut Oil
  • 1/2 Cup Coconut Cream
  • 1/2 Cup Rice Malt Syrup
  • 1-2 Tbsp. Cacao Powder
  • Caramel Sauce:
  • 2 Tbsp. Rice Malt Syrup
  • 2 Tbsp. Nut Butter or Tahini
  • 2 Tbsp. Coconut Cream/Milk (vegan option) or 20g Butter
Instructions:
  1. Blitz all BASE ingredients together to form a meal and press into silicon moulds and freeze whilst making the filling.
  2. Blitz all Cheese Cake FILLING ingredients until smooth and silky, pour on top of bases and sprinkle Bliss Fit Granola - Cacao Crunch with Cinnamon Granola on top. Freeze overnight and take out 5-10 mins before drizzling with sauce and serving.
  3. For the Caramel Sauce: melt all ingredients for caramel sauce together in a double boiler until blended and smooth, pour over cheesecake and serve with roasted hazelnuts.
